Lomo is a Spanish cold cut made from marinated pork tenderloin. It is by far the most appreciated sausage in Spain. It is a part of the pig that is really very soft and smooth in the mouth.

Our tasty Lomo is the sublime combination of a long tradition in the breeding of purebred black-legged Iberian pigs (“Pata Negra”) and artisanal manufacturing, respecting the balance between man and nature. The denomination “Iberian acorn sausage” refers both to the genetic heritage (suis ibericus, better known as “Pata Negra”) and to the way the pigs are raised.

The exceptional quality and exquisite taste of our products are the result :

  • of an artisanal, regional and family production.
  • an ancestral know-how transmitted from generation to generation
  • respect for the well-being of the pigs (reared in semi-liberty) and their natural food with “bellotas” oak acorns and aromatic herbs.

You should also know that it is the oil from the acorns that gives this sausage its unique taste, a “good” (monounsaturated) fat that is close to the healthy fats of olive oil.

CONSEILS DE DÉGUSTATION

Pour tirer le meilleur parti de ce saucisson, il a été séché pendant de nombreux mois dans des séchoirs “Secaderos” :

  • Take it out of its packaging at least 1 hour before tasting.
  • Spread it on a warm plate so that it oxygenates at room temperature and all its rich and balanced aroma can develop.
  • Accompany it with a rich red wine (a Bordeaux, a Rioja or a Ribera de Duero…) or a wine from Jerez.

CONSERVATION TIPS

  • Conservation before opening: 2 months in the fridge.
  • Once opened, the ham can be kept for 5 days in the fridge.
