M for Macaron

If you love discovering new flavors, your stay in the Basque Country will be a great opportunity to try new recipes. Indeed, you can discover many dishes in restaurants and test some recipes at home to make your taste buds travel. But don’t forget to explore sweet flavors like the Basque macaron!

The macaron is well-known, but the Basque recipe stands out by offering a simple and generous cake that reflects the spirit of the Basque Country. You won’t find the smooth, ordinary macaron, but rather a pastry that resembles the Basque hills. If you get the chance, we highly recommend trying this Basque macaron for a new experience.

It’s also possible to easily make the recipe at home with a few ingredients. You just need ground almonds, sugar, and 3 egg whites. You don’t need many elements, but you will need to start a day in advance. To begin, mix the almonds and sugar and separately beat the egg whites until stiff peaks form. Then, gently fold them into the almond mixture and warm the preparation slightly, which will then go into a piping bag. Form mounds about 4 cm in diameter and let them rest overnight.

The next day, you can smooth out your macarons, make a small cut on the top, and bake them for 10 minutes. This recipe is very simple to follow but requires some time to prepare. If you want to be creative, you can prepare a ganache to spread between the two halves of the macarons to fill them according to your tastes!
