Ingredients for 20 macaroons
For the macaron shells :
- 150 g almond flour
- 150 g powdered sugar
- 55 g egg whites
- 30 g powdered sugar

- 100 g Foie Gras
- 50 g fresh cream
- Salt and pepper to taste
Preparing the macaroon shells
- Preheat your oven to 150°C and line a baking tray with parchment paper.
- In a food processor, blend the almond flour and powdered sugar to a fine powder, then sift.
- Beat egg whites until stiff, gradually adding powdered sugar until smooth and glossy.
- Gently fold the stiffly beaten egg whites into the almond powder and powdered sugar mixture using a spatula, until the mixture is smooth.
- Pour the mixture into a piping bag and form small discs on the baking sheet.
- Leave to rest for 30 minutes to allow a crust to form.
- Bake for 15 to 20 minutes, until the shells are lightly browned.
Preparing the Foie Gras filling
- In a bowl, blend the Relais Gourmet Foie Gras and crème fraîche until creamy.
- Season to taste with salt and pepper.
- Transfer the filling to a piping bag.
Assembling the macaroons
- Once the shells have cooled, fill half of them with the Foie Gras cream.
- Close with another shell and press lightly.
- Refrigerate the macaroons for at least an hour before serving.
