  • 2 thin, firm zucchini
  • 100 g foie gras (preferably whole)

  • Fleur de sel
  • Freshly ground pepper

Preparation

1. Prepare the zucchini:

  • Wash the zucchini thoroughly.
  • Slice them thinly with a mandolin or sharp knife, into rounds or ribbons.
  • Arrange them nicely in a rosette on the plates.
  • Drizzle with lemon juice and oil. Leave to marinate for 10 to 15 minutes in the fridge.

2. Crush the hazelnuts:

  • Dry roast them in a pan for a few minutes to reveal their aroma.
  • Coarsely crushed.

3. Foie gras:

  • Cut the foie gras into shavings or thin slices (tip: put it in the freezer for 10 minutes to make it easier to cut).
  • Arrange gently on the zucchini to create your zucchini with foie gras.

4. Final Dressing:

  • Sprinkle over the hazelnuts.
