With the sunny weather just around the corner, there’s nothing better than a refreshing sweet and salty treat. Do you like Foie Gras and love ice cream? Then this recipe for Profiteroles au Foie Gras is for you! Recipe for 4 people: preparation time 20min, waiting time 1h10.

Profiteroles with Foie Gras

Ingredients

For ice cream

  • – 200g Relais Gourmet Foie gras block
  • 200g fresh cream
  • 5cl white wine
  • 1 tablespoon honey
  • 1 tablespoon Espelette pepper

For the chocolate sauce

  • 20cl Red Wine
  • 4 squares of chocolate
  • 10cl fresh cream

Preparation

For the choux pastry

Bring 25cl water, 100g butter and a pinch of salt to the boil. Remove from heat and pour in 125g flour. Loosen from sides and bottom. Add the 4 eggs one by one. Place the dough in a silicone bag and arrange on a baking sheet. Bake at 200°C.

For the sauce

Reduce the red wine in a saucepan. Add the chocolate and allow to melt. Add the cream and reduce over a bain-marie.

For ice cream

Combine the chopped foie gras with the white wine. Add the cream and honey. Blend and pour into an ice-cream maker for 30min.

Dressage

Cut the cabbages in half. Fill with a scoop of ice cream. Place on a plate and drizzle with chocolate sauce.
