Algo que har\u00e1 las delicias de los m\u00e1s golosos. <\/p>\n<\/blockquote>\n\n<h2 class=\"wp-block-heading\">Bayona, imprescindible en tu viaje al Pa\u00eds Vasco franc\u00e9s<\/h2>\n\n<p>Lo m\u00e1s probable es que, si visitas la regi\u00f3n suroeste de Francia y te diriges al Pa\u00eds Vasco franc\u00e9s, tu viaje comience o termine en Bayona.<\/p>\n\n<p>A caballo entre Francia y Espa\u00f1a, esta peque\u00f1a ciudad de 50.000 habitantes se nutre de su herencia francesa y vasca, por supuesto, pero tambi\u00e9n de sus vecinos espa\u00f1oles, a media hora en coche hacia el sur.<\/p>\n\n<p>Puede que Bayona no sea tan fastuosa como su vecina Biarritz, pero tiene mucha historia y mucho encanto. Y chocolate. Mucho, mucho chocolate.  <\/p>\n\n<h2 class=\"wp-block-heading\">La gastronom\u00eda de Bayona: un patrimonio notable<\/h2>\n\n<p>El patrimonio gastron\u00f3mico de Bayona no es nada nuevo. De hecho, la situaci\u00f3n geogr\u00e1fica de la ciudad ha permitido el desarrollo de una rica cultura culinaria. En el coraz\u00f3n de la ciudad confluyen dos r\u00edos, el Nive y el Adour, que hacen que los productos lleguen r\u00e1pidamente. Al fin y al cabo, la ciudad est\u00e1 a caballo de la centenaria ruta costera entre Francia y Espa\u00f1a.   <\/p>\n\n<p>Esta situaci\u00f3n se ha aprovechado a lo largo del tiempo para perfeccionar numerosas <a href=\"https:\/\/relaisgourmet.com\/index.php\/shop\/\" target=\"_blank\" rel=\"noreferrer noopener\">especialidades culinarias vascas<\/a>, entre las que destacan dos: el chocolate y el jam\u00f3n.<\/p>\n\n<h2 class=\"wp-block-heading\">Por qu\u00e9 Bayona es la capital francesa del chocolate<\/h2>\n\n<p>Bayona tiene una extraordinaria distinci\u00f3n culinaria en un pa\u00eds ya de por s\u00ed rico en distinciones culinarias: es la capital francesa del chocolate.<\/p>\n\n<p>El chocolate lleg\u00f3 a Francia procedente de Espa\u00f1a y se vio por primera vez en Bayona en la primera mitad del siglo XVII, durante el matrimonio de Luis XIII con Ana de Austria, hija de Felipe III de Espa\u00f1a.  <\/p>\n\n<p>Pero realmente se hizo popular en Versalles bajo su hijo, Luis XIV. Estaba casado, como a\u00fan recuerdan la mayor\u00eda de los ni\u00f1os franceses, con la infanta Mar\u00eda Teresa de Espa\u00f1a, as\u00ed que otra fuerte conexi\u00f3n espa\u00f1ola. <\/p>\n\n<p>En aquella \u00e9poca, el chocolate s\u00f3lo exist\u00eda como bebida caliente. Pero la mayor parte del chocolate se quedaba en Versalles, en la corte. Como ocurre con muchas innovaciones en Francia, la familia real lo adquiri\u00f3 primero, y s\u00f3lo m\u00e1s tarde se generaliz\u00f3 su consumo.  <\/p>\n\n<p>En cuanto a su aparici\u00f3n en Bayona, los archivos de la ciudad hacen referencia a lo que se conoce como chicolatte en 1670.  <\/p>\n\n<p>Bayona era una ciudad multicultural y muchos jud\u00edos se hab\u00edan establecido aqu\u00ed, descendientes de familias que hab\u00edan huido de Espa\u00f1a (y Portugal) tras la Inquisici\u00f3n cat\u00f3lica.  <\/p>\n\n<p>Fueron los primeros en Francia en trabajar con granos de cacao, produciendo un chocolate negro m\u00e1s amargo con un alto contenido en cacao. Gracias a ellos, el uso del chocolate se extendi\u00f3 al resto de la poblaci\u00f3n.   <\/p>\n\n<p>En el siglo XVIII, la mayor\u00eda de las casas de Bayona que se preciaban ten\u00edan una chocolati\u00e8re, una m\u00e1quina de hacer chocolate, igual que ahora tenemos m\u00e1quinas de caf\u00e9.<\/p>\n\n<p>En su apogeo, Bayona lleg\u00f3 a tener 30 maestros chocolateros. Entonces lleg\u00f3 la mecanizaci\u00f3n; la nueva generaci\u00f3n de m\u00e1quinas de vapor eran ruidosas y demasiado caras, y las el\u00e9ctricas a\u00fan m\u00e1s. Ocurri\u00f3 lo inevitable y el n\u00famero de chocolateros se redujo a ocho.  <\/p>\n\n<h2 class=\"wp-block-heading\">Bayona, el lugar ideal para los amantes del chocolate<\/h2>\n<div class=\"wp-block-image\">\n<figure class=\"alignright size-large is-resized\"><img fetchpriority=\"high\" decoding=\"async\" src=\"https:\/\/relaisgourmet.com\/wp-content\/uploads\/2020\/10\/chocolat-mousseux-bayonne.jpg\" alt=\"\" class=\"wp-image-12835\" width=\"312\" height=\"234\"\/><\/figure>\n<\/div>\n<p>Cuesta creer que haya tan pocas, porque al pasear por la zona peatonal del casco antiguo de Bayona, parece haber una chocolater\u00eda en cada esquina. Te sentir\u00e1s extra\u00f1amente obligado a entrar en cada una de ellas&#8230; <\/p>\n\n<p>Si eres un aut\u00e9ntico fan, todos los a\u00f1os se celebra un festival de tres d\u00edas para celebrar la llegada del chocolate a Francia. El festival es una peregrinaci\u00f3n para los amantes del chocolate, con puestos en las calles, piezas de chocolate gourmet para degustar, historia del chocolate y visitas chocolateras. En otras palabras, todo sobre el chocolate.  <\/p>\n\n<p>Francia, famosa por sus gremios medievales, tiene incluso un gremio chocolatero a trav\u00e9s del cual los chocolateros profesionales siguen transmitiendo sus conocimientos y secretos.<\/p>\n\n<hr class=\"wp-block-separator has-css-opacity\" \/>\n\n<p>Como habr\u00e1s deducido, el chocolate es una aut\u00e9ntica instituci\u00f3n en Bayona.
