En San Juan de Luz, la sopa de pescado deleita el paladar de turistas y lugare\u00f1os. Este sabroso plato se llama Ttoro. De hecho, el Ttoro es un plato regional t\u00edpico del Pa\u00eds Vasco, pero los habitantes de San Juan de Luz lo celebran todos los a\u00f1os.   <\/em><\/p>\n\n<h2 class=\"wp-block-heading\">Ttoro, plato tradicional vasco en San Juan de Luz<\/h2>\n\n<p>En septiembre, esta localidad costera de los Pirineos Atl\u00e1nticos celebra el Ttoro. Desde agosto se organizan concursos gastron\u00f3micos. Los resultados se anuncian el gran d\u00eda. El programa tambi\u00e9n incluye un desfile folcl\u00f3rico al son de las bandas. Las bandas, esas bandas de m\u00fasica ambulantes t\u00edpicas del suroeste de Francia, animan el acto. La historia cuenta que el Ttoro se preparaba antiguamente en alta mar o en el pueblo pesquero, utilizando como ingredientes las sobras de la pesca del d\u00eda. Era un poco como la tradicional pizza italiana, que utilizaba las sobras para hacer una receta t\u00edpica italiana. Hoy, sin embargo, la clase Ttoro ha avanzado un paso m\u00e1s. En sus recetas se utilizan ahora los llamados pescados \u00abnobles\u00bb, cuyos ingredientes principales var\u00edan de una temporada a otra.       <\/p>\n\n<h2 class=\"wp-block-heading\"><strong>Presentaci\u00f3n\nde un plato de Ttoro<\/strong><\/h2>\n\n<p>Esta sopa, t\u00edpica de la Costa Vasca\n, es bastante espesa. Es similar a un cocido. Se mezclan todas\nlas especies de pescado de la temporada:\nrape, merluza y congrio. Como guinda del pastel, se dejan algunos mariscos\ncomo mejillones y cigalas para enriquecer\nla preparaci\u00f3n. Elige los trozos m\u00e1s peque\u00f1os o medianos,\n, ya que los trozos enteros m\u00e1s grandes se cocinar\u00e1n a fuego lento con\nsalsa de tomate, sazonada con ajo y pimiento de Espelette.    <\/p>\n\n<h2 class=\"wp-block-heading\"><strong>Los\ningredientes y receta para hacer Ttoro<\/strong><\/h2>\n\n<p>Para preparar un buen Ttoro como\ndel tipo que puedes disfrutar en un peque\u00f1o puerto vasco sin que\nse te suba a la cabeza, necesitar\u00e1s :<\/p>\n\n<ul class=\"wp-block-list\">\n<li>4 rodajas de merluza\n\t<\/li>\n\n\n\n<li>4 rodajas de cabracho\n\t<\/li>\n\n\n\n<li>4 trozos de rape\n\t<\/li>\n\n\n\n<li>1 gobio\n\t<\/li>\n\n\n\n<li>1 vivo\n\t<\/li>\n\n\n\n<li>4 cigalas\n\t<\/li>\n\n\n\n<li>500 g de mejillones\n\t<\/li>\n\n\n\n<li>4 cucharadas de aceite de oliva\n \n\t<\/li>\n\n\n\n<li>1 vaso de vino blanco\n\t<\/li>\n\n\n\n<li>Guindilla de Espelette en polvo\n.\n<\/li>\n<\/ul>\n\n<h2 class=\"wp-block-heading\">Preparaci\u00f3n<\/h2>\n\n<p>Primero, corta o corta en cuartos el rubio y el pargo.<\/p>\n\n<p>Procura limpiar bien el pescado de\n. Guarda la cabeza y la cola para el caldo. <\/p>\n\n<p>Utiliza una cazuela de barro\npara cocinar tu Ttoro.<\/p>\n\n<p>A continuaci\u00f3n, vierte el aceite en la cazuela y cali\u00e9ntalo.<\/p>\n\n<p>Dora el pescado, luego vierte el caldo, las cigalas y los mejillones, seguido del vino blanco, y termina con el pimiento de Espelette.<\/p>\n\n<p>Ten cuidado al salar,\nya que el pescado puede contener ya un poco de sal.<\/p>\n\n<p>A continuaci\u00f3n, pasa a la cocci\u00f3n. Esto te llevar\u00e1 10 minutos en la vaporera. <\/p>\n\n<p>Sirve tu Ttoro con picatostes de pan\nsazonados con ajo.<\/p>\n\n<p>Por \u00faltimo, algunos consejos y recomendaciones: El secreto del sabor de Ttoro est\u00e1 en hacer el fumet o jugo de pescado.
