Pero, \u00bfc\u00f3mo se elabora realmente? \u00bfDe d\u00f3nde procede? \u00bfY sus or\u00edgenes protegidos? Este art\u00edculo responde a todas estas preguntas, sin olvidar un punto culinario sobre c\u00f3mo disfrutarlo.      <\/p>\n\n<h2 class=\"wp-block-heading\">M\u00e9todo de producci\u00f3n<\/h2>\n\n<p>Antes de que\npueda consumirse, el jam\u00f3n ib\u00e9rico debe pasar primero por\nuna serie de etapas de producci\u00f3n, como el sacrificio y\nel despiece, la salaz\u00f3n, el lavado y reposo, el secado\ny la curaci\u00f3n. El sacrificio y el despiece implican\nreconocer la calidad de la carne seg\u00fan su tipo antes de proceder a su\ndespiece. Una vez completada esta etapa, la carne pasa por el corte\nV o serrano antes de ser colocada sobre otra\ncarne ya cortada y separada por una fina capa de\nsal marina. \u00c9sta es la fase de salaz\u00f3n. Durante esta etapa, el jam\u00f3n se\nconservar\u00e1 durante varios d\u00edas en funci\u00f3n de su peso (a priori\nun d\u00eda para un kilo) durante los cuales se desarrollar\u00e1n su color y sus sabores\n.      \n<\/p>\n\n<p>Despu\u00e9s de salar\n, se lava el jam\u00f3n y se pone a reposar en\n. El jam\u00f3n se lava en agua tibia para\neliminar el exceso de sal. El periodo de reposo dura una media de 1 a\n3 meses y se realiza en una sala a baja temperatura\ncon un cierto porcentaje de humedad. \n El jam\u00f3n ib\u00e9rico suele curarse en bodegas o\nsecaderos naturales para eliminar de forma natural el contenido de humedad\n. Por t\u00e9rmino medio, tarda de 4 a 9 meses. Y como etapa final\n, no hay que subestimar la importancia de la maduraci\u00f3n\n, cuyo objetivo es desarrollar el sabor y la textura del jam\u00f3n.       \n<\/p>\n\n<h2 class=\"wp-block-heading\">Procedencia y origen protegido  <\/h2>\n\n<p>\nEl jam\u00f3n ib\u00e9rico es un tipo de jam\u00f3n obtenido principalmente de\ncerdos ib\u00e9ricos. Procede de la pata negra o pata negra,\nuna raza de cerdo f\u00e1cilmente reconocible por su pelaje negro oscuro o sus pezu\u00f1as\n. Estos cerdos ib\u00e9ricos son originarios de Espa\u00f1a,\nde regiones pr\u00f3ximas al Pa\u00eds Vasco, y son la fuente de los\nmejores jamones que son el orgullo del pa\u00eds. Existen tres\ntipos de jam\u00f3n ib\u00e9rico, pero esta denominaci\u00f3n s\u00f3lo est\u00e1 autorizada\npara los jamones elaborados con al menos un 75% de cerdo de raza ib\u00e9rica\nen su composici\u00f3n: cebo, cebo de campo y\nbellota.     \n<\/p>\n\n<p>\nEl cebo es un jam\u00f3n ib\u00e9rico elaborado con la carne de\ncerdos ib\u00e9ricos criados en una pocilga alimentados \u00fanicamente con\ncereales y verduras. El cebo de campo, en cambio, se elabora en\na partir de cerdos ib\u00e9ricos criados al aire libre, pero tambi\u00e9n con\nuna alimentaci\u00f3n a base de cereales y verduras. \n bellota es el aut\u00e9ntico jam\u00f3n ib\u00e9rico, elaborado con carne de cerdo 100%\nib\u00e9rico. Cuando hablamos de \u00abpata\nnegra\u00bb, nos referimos principalmente a la bellota.     \n<\/p>\n\n<p>En\nexisten 4 D.O.C. o Denominaciones de Origen para el jam\u00f3n ib\u00e9rico\n: D.O.C. Guijuelo del departamento-provincia de Salamanca\n, D.O.C. Jabugo-Huelva del departamento-provincia de Huelva\n, D.O.C. Extremadura de la comunidad aut\u00f3noma de Extremadura\ny D.O.C. Los Pedroches del departamento-provincia de C\u00f3rdoba\n.  \n<\/p>\n\n<h2 class=\"wp-block-heading\">Punto de vista culinario sobre c\u00f3mo disfrutar del Jam\u00f3n Ib\u00e9rico<\/h2>\n\n<p>Al igual que el vino\n, es esencial preparar adecuadamente tu jam\u00f3n ib\u00e9rico\npara disfrutarlo de la mejor manera posible. La temperatura ideal\nse alcanza cuando el jam\u00f3n empieza a brillar.\nCol\u00f3calo sobre una jamonera con un cuchillo afilado\ny corta las piezas en lonchas finas. Para extraer\nla corteza y las lonchas, haz un corte profundo y circular\nalrededor de todo el hueso. Esta extracci\u00f3n\nes necesaria para no alterar el sabor del jam\u00f3n ib\u00e9rico.     \n<\/p>\n\n<p>\nEl jam\u00f3n ib\u00e9rico se sirve mejor con un buen vino tinto con cuerpo, un vino blanco seco\no un excelente champ\u00e1n a\u00f1ejo. Un crujiente y fino\npan gourmet podr\u00eda servir, pero ser\u00eda\nmucho m\u00e1s interesante a\u00f1adir a la mezcla un poco de queso blando,\ntomate, uvas y nueces. Tambi\u00e9n se puede disfrutar en\ncon h\u00edgado de pato, setas frescas o champi\u00f1ones a la plancha rociados con aceite\no simplemente en combinaci\u00f3n con un sencillo pur\u00e9 de patatas
