Es famosa por sus museos, su historia y, sobre todo, su jam\u00f3n. Un jam\u00f3n que tarda meses en madurar y respeta numerosos criterios que afectan no s\u00f3lo a los animales y a los ganaderos, sino tambi\u00e9n a la propia regi\u00f3n. Desde el animal hasta la charcuter\u00eda, hay que seguir un gran n\u00famero de normas estrictas y etapas meticulosas antes de poder comercializar esta delicia culinaria.   <\/p>\n\n<h2 class=\"wp-block-heading\">Condici\u00f3n de IGP<\/h2>\n\n<p>Es lo que se conoce como <strong>indicaci\u00f3n geogr\u00e1fica protegida<\/strong>. Es el estatus que otorga la<strong>Uni\u00f3n Europea<\/strong>a todos los productos que cumplen unos criterios espec\u00edficos de producci\u00f3n y comercializaci\u00f3n. Cualquier producto que se elabore en una localidad concreta utilizando insumos procedentes exclusivamente de esa zona recibe este honorable estatus. Es el caso de este jam\u00f3n, que cumple todos los requisitos y se conoce como <strong>jam\u00f3n de Bayona<\/strong>.   <\/p>\n\n<h2 class=\"wp-block-heading\">Preparaci\u00f3n<\/h2>\n\n<p>Todo comienza con el cuidado riguroso de los cerdos utilizados para elaborar el jam\u00f3n, 18 razas en total, criados en la zona<strong>del Adour<\/strong>. Su alimentaci\u00f3n est\u00e1 controlada y libre de cualquier sustancia perjudicial para la producci\u00f3n de jam\u00f3n. Ni esteroides, ni aceites de pescado, ni antibi\u00f3ticos. Por ello, el cumplimiento de las normas es primordial durante el transporte, el sacrificio, el corte en piezas, el peso, el tama\u00f1o e incluso los requisitos de condimentaci\u00f3n (grasas, sales, etc.).      <\/p>\n\n<h2 class=\"wp-block-heading\">Secado<\/h2>\n\n<p>Los m\u00e9todos de secado pueden ser <strong>modernos<\/strong> o <strong>tradicionales<\/strong>. Pero siempre siguen las mismas fases de producci\u00f3n y<strong>secado<\/strong> y, sobre todo, utilizan el mismo equipo para controlar las variaciones estacionales. Los m\u00e9todos modernos permiten un control total y manual de la <strong>temperatura<\/strong> y la<strong>humedad<\/strong> en la <strong>c\u00e1mara de secado<\/strong>. Esto permite reproducir con \u00e9xito los distintos climas a los que se somete la carne.   <\/p>\n\n<p>Los m\u00e9todos tradicionales siguen el ritmo del tiempo y de la naturaleza. Aqu\u00ed en Bayona, el tiempo es alternativamente seco, debido a los vientos del sur<strong>(Foehn<\/strong>), y h\u00famedo, debido a los vientos del oeste hacia el oc\u00e9ano. En consecuencia, todo se hace por etapas y seg\u00fan un calendario muy preciso. Desde el sacrificio hasta el secado y sazonado, cada etapa sigue las estaciones.   <\/p>\n\n<h2 class=\"wp-block-heading\">Condimento<\/h2>\n\n<p>El curado, como el secado, respeta el tiempo y cada curado tiene su propio periodo. Al principio del proceso de curado, la carne no necesita muchos elementos gracias a las temperaturas muy bajas. Sin embargo, siempre se sala con una sal natural de la regi\u00f3n<strong>del Adour<\/strong>.  <\/p>\n\n<p>En los meses m\u00e1s c\u00e1lidos que siguen, se aplica a la carne una delicada mezcla de grasa de cerdo y harina o <strong>panne <\/strong>. Se utiliza para sellar el extremo cortado de la articulaci\u00f3n. Esto ayudar\u00e1 a reducir la velocidad de secado en los meses siguientes.  <\/p>\n\n<h2 class=\"wp-block-heading\">Refinando<\/h2>\n\n<p>Por \u00faltimo, la<strong>maduraci\u00f3n del <\/strong>Jam\u00f3n de Bayona es la \u00faltima y crucial etapa, ya que es aqu\u00ed donde el Jam\u00f3n de Bayona adquiere todas sus numerosas y deliciosas cualidades (suavidad, maridaje ideal de aromas, sellado perfecto, etc.). Por \u00faltimo, los jamones se graban con el <strong>lauburu<\/strong> (la cruz vasca es un sello que certifica la autenticidad del <strong>Jam\u00f3n de<\/strong> Bayona). En la corteza <\/p>\n\n<p>Es importante se\u00f1alar que si <strong>el Jam\u00f3n de Bayona<\/strong> es tan perfecto, se debe sin duda al largo tiempo que tarda en pasar por las distintas fases de elaboraci\u00f3n, entre <strong>12<\/strong> y <strong>18<\/strong> meses.
