Una vez completada esta etapa, la carne pasa por el corte en V tambi\u00e9n llamado corte serrano antes de ser colocada sobre otra carne ya cortada, separada por una fina capa de sal marina. Este es el proceso de salaz\u00f3n. En esta fase, el jam\u00f3n se conserva durante varios d\u00edas, en funci\u00f3n de su peso, y durante estos d\u00edas se desarrollan su color y sus aromas. Tras la salaz\u00f3n, el jam\u00f3n pasa por un proceso de lavado y reposo. \n<\/p>\n\n\n\n<p>El lavado se realiza con agua tibia y sirve para eliminar el exceso de sal. El periodo de reposo dura una media de entre 1 y 3 meses con los jamones colgados en una estancia a baja temperatura con un determinado porcentaje de humedad. El secado del jam\u00f3n ib\u00e9rico suele hacerse en bodegas o secaderos naturales para eliminar la humedad de forma natural. \n<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-procedencia-y-origen-protegido-del-jamon-iberico\">Procedencia y origen protegido del jam\u00f3n ib\u00e9rico<\/h2>\n\n\n\n<p>El jam\u00f3n ib\u00e9rico es un tipo de jam\u00f3n obtenido principalmente de cerdos ib\u00e9ricos espa\u00f1oles.
