Once opened, store in a cool, dry, dark place away from light and moisture, either in its original packaging or wrapped in aluminum foil or film, then in an airtight box. We often make the mistake of storing nougat in the refrigerator, which only alters its organoleptic properties, aroma and texture.  <\/li>\n<li><strong>Ingredients: <\/strong>64% roasted almonds, 12% honey, sugar, glucose syrup, egg white and emulsifier: (E-471).<\/li>\n<li>May contain traces of peanuts, sesame and hazelnuts.<\/li>\n<\/ul>\n<p><strong>This product is gluten-free, so it is suitable for celiacs.<\/strong><\/p>\n<p>Maria Simona Jijona turr\u00f3n has a <a href=\"https:\/\/www.mapa.gob.es\/es\/alimentacion\/temas\/calidad-diferenciada\/dop-igp\/pana_paste\/IGP_TurronJiJona.aspx\">designation of origin and is protected by the Jijona Regulatory Council<\/a>.<\/p>\n<h3>The origins of turr\u00f3n de Jijona<\/h3>\n<p>It was originally the city of<strong>Alicante<\/strong> itself that produced most of <strong>Spain&#8217;s nougat<\/strong>. The reason why this small town is a world reference in the production of <strong>turr\u00f3n<\/strong>, or <strong>touron<\/strong>, is nothing less than a legal dispute. <\/p>\n<p>In 17th-century Spain, trade was dominated by guilds, powerful organizations with exclusive rights to grant titles and manufacture certain products. A shoemaker could only produce shoes under the supervision of the shoemakers&#8217; guild, and a baker did not exist without the license of the bakers&#8217; guild. <\/p>\n<p>In this strange ecosystem, we find the <strong>masters of turr\u00f3n<\/strong>. Turr\u00f3n makers were not guild specialists, but farmers who earned extra money by selling this <strong>delicacy<\/strong>. This was not to the liking of the Valencia confectioners&#8217; guild, who considered <strong>honey<\/strong> and<strong> sugar products<\/strong> to be their domain. So they took the Alicante turroniers to court.   <\/p>\n<p>After a 6-year dispute, a court decision allowed the Valencian guild to take control of Alicante&#8217;s turr\u00f3nes, and the industry quickly disappeared from the town.<\/p>\n<p>The inhabitants of the small town of Sexona, now Jijona, took over from the capital.
