Remove the foie gras from its tin and the butter from its packaging, and leave to soften at room temperature.<br\/><br\/>2. Whip the very cold cream until stiff. Season with salt and pepper. Mash the foie gras and butter with a fork to obtain a smooth paste. Gently fold this mixture into the whipped cream.   <br\/><br\/>3. Spoon into small glasses and chill for at least 3 h.
