Recipe for 4 people: preparation time 20min, waiting time 1h10.   <\/p>\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-full is-resized\"><img fetchpriority=\"high\" decoding=\"async\" src=\"https:\/\/relaisgourmet.com\/wp-content\/uploads\/2023\/03\/profiterole-a-la-mousse-de-foie-gras-et-caramel-de-balsamique-edited.jpeg\" alt=\"Profiteroles with Foie Gras\" class=\"wp-image-24955\" width=\"559\" height=\"419\"\/><\/figure>\n<\/div>\n<h2 class=\"alignwide wp-block-heading\">Ingredients<\/h2>\n\n<h3 class=\"alignwide wp-block-heading\">For ice cream<\/h3>\n\n<ul class=\"wp-block-list\">\n<li>&#8211; 200g Relais Gourmet Foie gras block  <\/li>\n\n\n\n<li>  200g fresh cream  <\/li>\n\n\n\n<li>5cl white wine  <\/li>\n\n\n\n<li>1 tablespoon honey  <em>           <\/em>                                                                                                <\/li>\n\n\n\n<li>1 tablespoon Espelette pepper  <\/li>\n<\/ul>\n\n<h3 class=\"alignwide wp-block-heading\">For the chocolate sauce<\/h3>\n\n<ul class=\"wp-block-list\">\n<li>20cl Red Wine  <\/li>\n\n\n\n<li>4 squares of chocolate  <\/li>\n\n\n\n<li>10cl fresh cream<\/li>\n<\/ul>\n\n<h2 class=\"alignwide has-text-align-left wp-block-heading\">Preparation<\/h2>\n\n<h3 class=\"alignwide wp-block-heading\"><strong>For the choux pastry<\/strong><\/h3>\n\n<p>Bring 25cl water, 100g butter and a pinch of salt to the boil. Remove from heat and pour in 125g flour. Loosen from sides and bottom. Add the 4 eggs one by one. Place the dough in a silicone bag and arrange on a baking sheet. Bake at 200\u00b0C.       <\/p>\n\n<h3 class=\"alignwide wp-block-heading\"><strong>For the sauce<\/strong><\/h3>\n\n<p>Reduce the red wine in a saucepan. Add the chocolate and allow to melt. Add the cream and reduce over a bain-marie.  <\/p>\n\n<h3 class=\"alignwide wp-block-heading\"><strong>For ice cream<\/strong><\/h3>\n\n<p>Combine the chopped foie gras with the white wine. Add the cream and honey. Blend and pour into an ice-cream maker for 30min.    <\/p>\n\n<h2 class=\"alignwide wp-block-heading\"><strong>Dressage<\/strong><\/h2>\n\n<p>Cut the cabbages in half. Fill with a scoop of ice cream.
