Reserve the caps. <\/li>\n\n\n\n<li>Crush small mushrooms, oyster mushrooms and the stems of large mushrooms into <strong>duxelles<\/strong>.<\/li>\n\n\n\n<li>Brown the shallots in the melted butter over medium heat.<\/li>\n\n\n\n<li>Add the mushroom duxelles and cook over low heat for 8 to 10 minutes.<\/li>\n\n\n\n<li>Add the herbs (parsley, thyme, tarragon), salt, pepper and <strong>allspice<\/strong>.<\/li>\n\n\n\n<li>Stuff the mushroom heads with a layer of the mixture.<\/li>\n\n\n\n<li>Cut each slice of foie gras into 4 and insert a piece into each mushroom.<\/li>\n\n\n\n<li>Cover with the remaining stuffing and sprinkle with breadcrumbs.<\/li>\n\n\n\n<li>Arrange the mushrooms in a lightly <strong>buttered<\/strong> or <strong>oiled<\/strong> dish.<\/li>\n\n\n\n<li>Bake at <strong>180\u00b0C (fan oven)<\/strong> for 10 minutes.
