The\nlocal wine production is in fact a legacy of the monks of\nRoncevaux who began production in the 11th century. The\nvineyard itself represents 200 ha of vineyards with a\nyield of over 5000 hl. Its wine is classified as AOC\n, a French label protecting the product of the\ngeographical origin.     \n<\/p>\n\n<h2 class=\"wp-block-heading\">Iroul\u00e9guy, the land of Basque wines<\/h2>\n\n<p>Iroul\u00e9guy is a\nplace of great charm, with its peaks, valleys and the white\nof the village contrasting with the roof tiles in a\ngreen setting. In all, there are half a dozen\ngrape varieties: Tannat (the majority of black grape acreage),\nCabernet franc (which brings finesse), Cabernet sauvignon (which\nbrings structure and volume). We also find Gros Maseng\n(most of the white grape surface area), Petit Maseng\n(which brings a lot of volume to the wine), Courbu (brings finesse\nand smoothness to the wine). Iroul\u00e9guy has much more to offer than the\nold, rustic wines your palate struggles to tolerate.     \n<\/p>\n\n<p>The village also values its cuisine\nand demonstrates this very well through its\ninstitutions such as &#8220;Les Pyr\u00e9n\u00e9es&#8221;, run by the Arrambide family\n, which earned it its stars, and &#8220;Auberge Ostap\u00e9&#8221;.\n Iratze Ostatua&#8221; is dedicated to\nlocal cuisine such as Basque garbure with xamango or axoa\nveal with three peppers.  \n<\/p>\n\n<h2 class=\"wp-block-heading\">Must-visit estates<\/h2>\n\n<p>Spread over\nseveral estates and a cooperative winery. Here are just a few of the wineries and production sites to visit\n: <\/p>\n\n<ul class=\"wp-block-list\">\n<li>The\n Arretxea estate has long been renowned for its wines, especially the red\n.\n\t<\/li>\n\n\n\n<li>The\n Gutizia estate is the youngest in Iroul\u00e9guy, distinguishing itself with its\n cuv\u00e9e Dotorea fruity flavors.\n\t<\/li>\n\n\n\n<li>The\n Ameztia estate welcomes visitors for a tour of the cellars and\n vineyards, followed by a tasting session.\n\t<\/li>\n\n\n\n<li>The\n Barna estate with its Iroul\u00e9guy 2010: 60% cabernet blanc, 30%\n tann\u00e2t, 10% cabernet sauvignon\n<\/li>\n<\/ul>\n\n<h2 class=\"wp-block-heading\">But what dishes should I serve with\nd&#8217;Iroul\u00e9guy wines?<\/h2>\n\n<p>Let&#8217;s take a look at some\nsimple ideas for pairing. Red Iroul\u00e9guy, served between 17\u00b0\nand 20\u00b0, goes wonderfully well with roasted red meats or in\nsauce, game and cheese. White wines, meanwhile, are served between 8\u00b0\nand 10\u00b0, and go well with fish and shellfish, and spiced\nbreads.
