An original and light take on foie gras!<\/p>\n\n<figure class=\"wp-block-image size-full is-resized\"><img decoding=\"async\" width=\"354\" height=\"254\" src=\"https:\/\/relaisgourmet.com\/wp-content\/uploads\/2025\/04\/image-1.png\" alt=\"\" class=\"wp-image-55989\" style=\"width:800px;height:auto\" srcset=\"https:\/\/relaisgourmet.com\/wp-content\/uploads\/2025\/04\/image-1.png 354w, https:\/\/relaisgourmet.com\/wp-content\/uploads\/2025\/04\/image-1-300x215.png 300w\" sizes=\"(max-width: 354px) 100vw, 354px\" \/><\/figure>\n\n<h2 class=\"wp-block-heading\" id=\"h-ingredients-pour-6-verrines-ou-4-petites-entrees\"><strong>Ingredients<\/strong> <em>(for 6 verrines or 4 small starters)<\/em><\/h2>\n\n<h3 class=\"wp-block-heading\" id=\"h-pour-le-gaspacho\">For the gazpacho :<\/h3>\n\n<ul class=\"wp-block-list\">\n<li>5 ripe heirloom tomatoes (beef heart or green zebra for extra flavour)<\/li>\n\n\n\n<li>1 red bell pepper<\/li>\n\n\n\n<li>1\/2 yellow bell pepper (sweeter than green)<\/li>\n\n\n\n<li>1 small C\u00e9vennes sweet onion or 2 c\u00e9bettes<\/li>\n\n\n\n<li>1 garlic clove, degermed<\/li>\n\n\n\n<li>1 small cucumber (or 1\/2 large, Noa type)<\/li>\n\n\n\n<li>2 c. tablespoon fruity extra-virgin olive oil<\/li>\n\n\n\n<li>1 c. tablespoon aged sherry vinegar or artisanal cider vinegar<\/li>\n\n\n\n<li>1 pinch Espelette pepper (adjust to taste)<\/li>\n\n\n\n<li>Gu\u00e9rande salt, freshly ground pepper<\/li>\n<\/ul>\n\n<h3 class=\"wp-block-heading\" id=\"h-pour-la-garniture\">For the garnish :<\/h3>\n\n<ul class=\"wp-block-list\">\n<li><a href=\"https:\/\/relaisgourmet.com\/en\/product\/natural-whole-duck-foie-gras\/\">120 g foie gras<\/a> (ideally whole and of good quality)<\/li>\n\n\n\n<li>A few drops of balsamic reduction or fig balsamic vinegar cream<\/li>\n\n\n\n<li>Fleur de sel<\/li>\n\n\n\n<li>Toasted country bread (optional) or garlic-rubbed croutons<\/li>\n\n\n\n<li>A few fresh herbs (purple basil, coriander or microgreens)<\/li>\n<\/ul>\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n<h2 class=\"wp-block-heading\" id=\"h-preparation\"><strong>Preparation<\/strong><\/h2>\n\n<h3 class=\"wp-block-heading\" id=\"h-1-preparer-le-gaspacho\">1. Prepare the gazpacho :<\/h3>\n\n<ul class=\"wp-block-list\">\n<li><strong>Stem<\/strong> the tomatoes (plunge into boiling water for 10 seconds, then cool to remove the skin), <strong>remove the seeds<\/strong> and cut into chunks.<\/li>\n\n\n\n<li>Peel cucumber, removing seeds if necessary.<\/li>\n\n\n\n<li>Chop the onion, garlic and peppers.<\/li>\n\n\n\n<li>Finely blend all the vegetables in a powerful blender with the olive oil, vinegar, Espelette pepper, salt and pepper.<\/li>\n\n\n\n<li><strong>Strain through a<\/strong> fine <strong>sieve<\/strong> for a silky texture.<\/li>\n\n\n\n<li>Set aside in the fridge for at least 2 hours (ideally 4 to 6 hours for maximum flavor infusion).<\/li>\n<\/ul>\n\n<h3 class=\"wp-block-heading\" id=\"h-2-dresser\">2. Dressing :<\/h3>\n\n<ul class=\"wp-block-list\">\n<li>Pour the chilled gazpacho into verrines, small soup plates or transparent bowls.<\/li>\n\n\n\n<li>Use two spoons to form foie gras <strong>quenelles<\/strong>, or cut into <strong>small, even cubes<\/strong>.<\/li>\n\n\n\n<li>Carefully place the foie gras on top of the gazpacho.<\/li>\n\n\n\n<li>Add a few drops of balsamic reduction or fig balsamic cream for a sweet-and-sour contrast.<\/li>\n\n\n\n<li>Sprinkle with a pinch of fleur de sel and garnish with a few micro-pods or fresh herbs.<\/li>\n<\/ul>\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n<h2 class=\"wp-block-heading\" id=\"h-conseils-amp-variantes\"><strong>Tips &amp; variations<\/strong><\/h2>\n\n<ul class=\"wp-block-list\">\n<li><strong>More gourmet texture<\/strong>: add a small piece of stale breadcrumbs soaked in cold water and wrung out before blending the vegetables.<\/li>\n\n\n\n<li><strong>Additional flavourings<\/strong>: a dash of lime juice or a few basil leaves mixed directly into the gazpacho.<\/li>\n\n\n\n<li><strong>Land and sea&#8221; option<\/strong>: add a few small shrimps marinated in lemon to accompany the foie gras.<\/li>\n\n\n\n<li><strong>Vegetarian version<\/strong>: replace foie gras with creamy burrata or avocado tartar.<\/li>\n<\/ul>\n\n<p>Recipe by <a href=\"https:\/\/relaisgourmet.com\/en\/\">Relais Gourmet<\/a><\/p>\n\n<p>Want more recipes?
