Description
Maria Simona’s Jijona soft turron is made according to the traditional recipe:
- Net weight: 150 g
- Shelf life Turrón de Jijona: 9 months minimum. Once opened, store in a cool, dry, dark place away from light and moisture, either in its original packaging or wrapped in aluminum foil or film, then in an airtight box. We often make the mistake of storing nougat in the refrigerator, which only alters its organoleptic properties, aroma and texture.
- Ingredients: 64% roasted almonds, 12% honey, sugar, glucose syrup, egg white and emulsifier: (E-471).
- May contain traces of peanuts, sesame and hazelnuts.
This product is gluten-free, so it is suitable for celiacs.
Maria Simona Jijona turrón has a designation of origin and is protected by the Jijona Regulatory Council.
The origins of turrón de Jijona
It was originally the city ofAlicante itself that produced most of Spain’s nougat. The reason why this small town is a world reference in the production of turrón, or touron, is nothing less than a legal dispute.
In 17th-century Spain, trade was dominated by guilds, powerful organizations with exclusive rights to grant titles and manufacture certain products. A shoemaker could only produce shoes under the supervision of the shoemakers’ guild, and a baker did not exist without the license of the bakers’ guild.
In this strange ecosystem, we find the masters of turrón. Turrón makers were not guild specialists, but farmers who earned extra money by selling this delicacy. This was not to the liking of the Valencia confectioners’ guild, who considered honey and sugar products to be their domain. So they took the Alicante turroniers to court.
After a 6-year dispute, a court decision allowed the Valencian guild to take control of Alicante’s turrónes, and the industry quickly disappeared from the town.
The inhabitants of the small town of Sexona, now Jijona, took over from the capital. Away from the eyes and influence of the guild, local artisans managed to circumvent the ban on sugar and honey, establishing themselves as the home of authentic Spanish nougat.
