Ingredients
- 3 eggs
- 150g flour
- 1 level teaspoon baking powder
- 7 tablespoons sunflower oil
- 130g of foie gras
- 3 fresh or frozen figs
- 15g Parmesan cheese
- salt, pepper
Preparation
Finely dice the figs and foie gras. Set aside.
Mix the sifted flour and baking powder. Whisk the eggs with the Parmesan. Stir in flour, yeast, oil, figs, foie gras and a pinch of salt and pepper.
Mix gently until smooth.
Leave to rest for at least 4 hours in the refrigerator.
Preheat the oven to 220°C, fill the madeleine molds 2/3 full and bake for 4 minutes.
Turn the oven down to 180°C and continue baking for around 6 minutes, until the madeleines are lightly browned.
Take the madeleines out of the oven, wait a few minutes before unmolding them, and enjoy them when they’re still warm.
