Conservation
Store the ham in a cool, dry place, with an ideal temperature between 15°C and 20°C. – Avoid temperatures that are too low or too high, which can alter its texture and taste – Protect the ham from direct sunlight, which could affect its flavor and color Protection after cutting: – Cover the cut area: Use a piece of fat taken from the ham to cover the exposed part. This prevents oxidation and drying out. Then, cover with a clean cotton cloth to let the product breathe while protecting it from impurities. – Avoid plastic films in summer: In hot weather, prefer a breathable fabric to avoid excessive perspiration of the ham.
