The three main families of foie gras
There are several types of foie gras, and each has its own storage requirements:
- Fresh foie gras should be stored in the refrigerator between 0°C and 4°C, and eaten quickly (usually within 10 days).
- Semi-cooked foie gras can also be kept in the fridge, but its shelf life is longer: between 3 and 6 months depending on the packaging.
- Canned foie gras, on the other hand, is sterilized and can be kept without a fridge for up to 4 years at room temperature, as long as it is stored in a dry and cool place.
It is the ideal format for gifts or export, as it combines longevity and practicality.
Best before date, temperature and ideal conditions
The packaging always indicates the best before date of the foie gras, which allows you to guarantee optimal quality, both in taste and texture. As long as you don’t open them, the canned goods don’t need to be stored in the fridge. Once opened, you should keep them in a cool place and consume them quickly, ideally within 3 to 5 days.
