Die Appellation, die sich aus zwei geografischen Namen zusammensetzt, n\u00e4mlich dem Gipfel des Midi d&#8217;Ossau in den Pyr\u00e9n\u00e9es-Atlantiques und dem Wald von Iraty im Baskenland, wird seit 1980 durch die AOC (Appellation d&#8217;Origine Contr\u00f4l\u00e9e) und seit 1996 durch die AOP (Appellation d&#8217;Origine Prot\u00e9g\u00e9e) gesch\u00fctzt. <\/em><\/p>\n\n<h2 class=\"wp-block-heading\"><strong>Warum<\/strong>&#13;\n<strong>die Bezeichnung Ossau-iraty?<\/strong><\/h2>\n\n<p>Die Viehzucht war in den Pyren\u00e4en von der Jungsteinzeit bis in die heutige Zeit eine wesentliche T\u00e4tigkeit, als die Bauern begannen, K\u00e4se herzustellen, den sie selbst verbrauchten, bevor sie den \u00dcberschuss verkauften. Doch mit der Zeit wachsen die Rinder heran und die Bauern haben keine Zeit mehr, den K\u00e4se zu verkaufen, sie konzentrieren sich nur noch auf das Melken der Milch. Also entscheiden sie sich f\u00fcr den Einsatz von K\u00e4sereifung Mitteln.\n<\/p>\n\n<p>Im Jahr 1904 lie\u00dfen sich Verarbeiter aus Roquefort-sur-Soulzon in den Pyren\u00e4en nieder, was das Einkommen der Bauern erh\u00f6hte.
